Not sure how to reproduce, but we have had an issue with an executive receiving an Office 365 message on his iPhone where the message was truncated in mid-sentence (using mail.app).
Exchange ActiveSync will only work on mobile devices, tablets and Outlook 2013. To use an Exchange account with Mac Mail, you'll actually need Exchange Web Services. I noticed the same issue (once) on a message with several embedded pictures and resolved by:
1. Navigating away from the message in the messages list
2. Expanding the message threads (tapping on '>>' next to the subject in the message list)

Within a second or two, the entire message was displayed, and I'm no longer able to recreate the original problem.
Anyone else experience this behavior? We all pretty much just upgraded to iOS 11.2.
